Turmeric Coconut Protein Bars (Dairy Free)

If you are looking for a dairy-free snack to fuel your rides, this recipe gives you a simple option to make at home. As of recently, it is possible to buy coconut condensed milk as an alternative to dairy. Here, we use coconut condensed milk as a base ingredient, and firm up the mix with coconut flour and almond meal as fillers. Turmeric provides an unusual flavour note, while sliced almonds give texture. As pointed out elsewhere on this site, there is nothing special about either turmeric or coconut in health terms. However, they do add some variety to your riding snacks. So if you enjoy the flavour, feel free to indulge. Otherwise, you might consider our original dairy-based recipe.

Ingredients

320 g coconut condensed milk
10 g turmeric powder
50 g icing sugar
100 g coconut flour
80 g almond meal
50 g natural sliced almonds (with skin on)

Method

In a small saucepan, warm the coconut condensed milk over low heat. This will make it easier to mix the ingredients together. In a medium bowl, mix turmeric powder, icing sugar, coconut flour and almond meal. When well mixed, add the sliced almonds. Pour in warm coconut condensed milk and mix well. Press the mixture into a paper-lined square tin (20 x 20 cm), chill overnight in the refrigerator, then turn out and cut into squares.
